Meet Première Bulle; “The First Bubble”

Our Sommelier and Marchand de Vin, Gilles Faëlens passionately shares the stories of each wine he hand-picked for our Wine Boutique. Enjoy as he tells the tale of “The First Bubble”:

Première Bulle, named "The First Bubble," holds a unique place in history as the earliest recorded sparkling wine. Originating in 1531, this wine was first crafted by Benedictine monks in the Abbey of Saint-Hilaire, near Limoux, decades before Champagne became popular. The monks discovered the natural bubbles by accident when wine left to ferment developed carbonation due to a secondary fermentation in the bottle. This process, today known as méthode ancestrale, is what gave Première Bulle its refined bubbles, thus cementing Limoux as the birthplace of French sparkling wine.
